PACKED EARLY IN THE SEASON
Sardines are caught early in smoking season, when they are small and silvery. Tin for scale (we were out of bananas).
SIX SARDINES IN EVERY TIN
Each tin holds about six whole sardines, smoked over oak and laid in by hand. Small fish, big (super smoky) flavor!

Small sardines are full of attitude. They are richer, saltier and more flavor-packed. Great qualities for a snack tin!

Just like (most) of us, trout is more chill than a sardine. It is milder in flavor, which makes it a more flexible tin for cooking.
